This lot comes from twenty growers in the Chericho kebele of Arbegona, selected through Testi Specialty Coffee's Premium Cherry Selection program — a scheme that pays a premium for consistently ripe, well-managed cherry. Intake at Yaye washing station is deliberately strict, with extra sorting and floatation used to level out quality before anything is processed.
Cherry is pulped and fermented in clean water for 48 hours under close watch, then washed and density-graded through channels before moving to raised beds. Drying runs about 21 days under parabolic shade with tight control of layer depth, turning and airflow. The espresso roast keeps the delicacy intact — jasmine tea and stone fruit over a soft floral finish.
