Panama Eduvina Estate Natural Geisha Single Origin Filter.
This coffee comes from two smallholder producers Eduviges Alvares; the owner of Eduvina Geisha Farm & Plinio Ruizand, producer and owner of ‘KR Specialty Coffee’. Their farms neighbour each other in the prized Boquete region. This region is where the ‘geisha’ was discovered in 2004 and these trees continue to produce some of the most complex cup profiles of any varietal.
The cherries for this lot are sun dried for 30 days and then rested for 90 to 100 days at a minimum.
Plinio Ruiz’ family business has always been coffee; from farming to exporting and roasting. Their focus has been on building and maintaining close relationships with smallholder producers of specialty coffees, including this lot from Eduviges. This allows them to get to know their coffees and develop processes to produce high-quality and complex cups, and ultimately sell them in the specialty market.
