For this honey lot, hand-picked ripe cherries are sorted and depulped so only a thin, even layer of mucilage stays on the parchment, judged by feel to boost sweetness and body without tipping into over-fermentation. Slow drying on raised beds concentrates the sugars while holding onto clarity and fruit.
