
Maria Rodriguez runs Finca Betania with her husband Linarco in the highlands of Palestina, Huila, as part of a 117-family smallholder group committed to chemical-free farming and healthy soils.
Together the group has invested in cupping labs, drying stations and shared warehousing, keeping each lot traceable to its farm. Ripe cherries are floated, sorted and depulped within hours, then fermented anaerobically in sealed tanks for 32 hours before washing and a slow 20–25 day dry on raised beds.
