
Maria Rodriguez runs Finca Betania in the highlands of Palestina, Huila with her husband Linarco, as part of a 117-family smallholder group committed to chemical-free farming and healthy soils.
Together the group has invested in cupping labs, drying stations and shared warehousing, keeping each farm's lot fully traceable. Ripe cherries are floated, sorted and depulped quickly, then fermented in sealed tanks for 32 hours before washing and a slow 20–25 day dry on raised beds. The result is a clear, sweet SL28 shaped by Maria's meticulous standards for picking, fermentation and drying.
