Thunguri Wet Mill sits within the Kibirigwi Farmers’ Cooperative Society in Kirinyaga County, one of several mills serving the cooperative’s network of smallholder growers in this high-altitude zone. Ripe cherries are selectively handpicked and delivered to the mill the same day to protect cherry integrity before processing.
The lot is fully washed — parchment is fermented for roughly 16 to 24 hours to break down the mucilage, then washed, soaked in clean water and moved to raised drying beds. Drying runs for around 7 to 15 days under ambient sun with regular turning and hand sorting, preserving the clarity, defined acidity and structural separation Kenyan coffees are prized for.
