We first met Silvio Leite in 2008 and were immediately blown away by his talent, expertise and dedication. As an educator, mentor and co-founder of the Cup of Excellence program, he has played a pivotal role in shaping the specialty coffee industry, both in Brazil and internationally.
For many years, Silvio has helped us source beautiful coffees from Brazil, but in the last four years we’ve been lucky enough to buy coffee that he’s produced himself! He had wanted to establish his own coffee farm for a long time, and in 2019, he finally purchased 30 hectares of land, and hired an all-star team to help him run the farm.
This lot of coffee was processed using the pulped natural method. After being selectively hand-picked, the coffee cherries were pulped and then dried in greenhouses. The extended shade-drying process allowed the beans to retain more of the sugars from the fruit mucilage, resulting in a sweet and complex coffee in the cup.
