Cajamarca sits high in the hills of Tolima, a little over 1,800 metres up, on mineral-rich soil left behind by the nearby Cerro Machín volcano. The name comes from the Quechua for cold lands, and the cool year-round climate gives the cherries a long, slow ripening. This lot is pooled from six smallholder cafeteros working tiny plots in and around the town. Coffee from a region this remote would normally disappear into a large commercial export lot, but Market Lane's long-running partnership with Pergamino means it stays separate and is sold as its own region-specific lot. The cup is rich and sweet with a red-berry lift, and it suits espresso beautifully.
