Iris González is a 4th-generation producer. Her father, Jose Mario, purchased Las Cortinas farm in 1991, recognising the potential in the property’s 2070m elevation and its proximity to Lake Ayarza. Jose Mario tragically passed away just two years later, leaving the 17-year-old Iris and her mother to run the farm. The pair planted avocados to supplement their coffee income and, in the process, gained confidence in their farming skills and improved the farm’s infrastructure.
Iris now processes the family’s coffee on-site, which gives her oversight of the entire production process. She is committed to farming as sustainably as possible, telling us, “we have a responsibility to take good care of the land.”
This coffee was selectively hand-picked and then wash-processed and dried on raised beds. Iris and her team have found that the humidity caused by the lake slows down the drying process, which results in more complex flavours in the cup.
