Arturo Arango is part of the wave of young Colombian growers rebuilding their family farms around cup quality. He studied agroindustry in Argentina before returning home, and in 2015 bought El Paraíso, a 25-hectare property in Barcelona, Quindío. His first years there went into replacing ageing trees with better-performing varieties — Castillo, Caturra, Costa Rica and Java — and he still oversees every stage himself, from pruning through to processing.
Volcanic soils and a wide day-to-night temperature swing slow ripening on the farm, letting sugars and acids build gradually in the cherry. This lot was handpicked and float-sorted, then fermented underwater for 30 hours at the La Pradera station before washing and drying. The cup is light and delicate in body, opening on nectarine, lifting through grapefruit acidity, sweetening with honey and closing on soft walnut.
