Jairo Arcila is a third-generation producer from Quindío who spent more than four decades managing dry mills before turning his focus to the family's own farms. This lot from Santa Monica was processed at La Pradera, the experimental facility run by his sons through Cofinet: cherries undergo 24 hours of aerobic fermentation, then 200 hours of sealed anaerobic fermentation in GrainPro bags, before slow drying on raised beds over 8–12 days. The result is a layered but composed natural — dense blueberry and plum fruit, dark chocolate sweetness, and a lingering black tea finish.
