Luz Helena Salazar grows this 100% Caturra lot at La Leona, her eight-hectare farm outside Armenia in Quindío, where volcanic soils, consistent cloud cover and mild Andean temperatures encourage slow, even cherry ripening. At Cofinet's La Pradera mill the cherries are hand-sorted, floated, fermented underwater for 30 hours, then washed and dried on raised beds. The result is a bright, elegant filter cup — raspberry and pomegranate up front, juicy orange acidity and a delicate rose note, finishing syrupy, clean and sweet.
