Chelchele Washing Station sits in the kebele of the same name in Kochere, taking cherry from several hundred smallholder households who farm less than a hectare each alongside enset, root crops and native shade trees.
Picked cherry is hand sorted and rinsed whole, then dried on raised beds for anywhere from 8 to 25 days, turned constantly as it ferments inside its own skin. Padre has bought from this station for many years, and the result is a fuller, juicier take on Yirgacheffe with confectionery sweetness that holds up in espresso, milk and filter.
