Mwito is the most remote of Rwanda Trading Company's sixteen washing stations, perched in the hills above Lake Kivu in West Nyamasheke. Naturally processed Rwandan lots of this calibre are a rarity — ripe Red Bourbon cherries are given a short whole-cherry ferment, then shade-dried on raised beds for up to two weeks with regular turning for clarity and even moisture loss. The cup is creamy and confectionary-sweet, with bergamot tea, cinnamon spice, vanilla and apricot.
