Experimentation in our DNA: Santuario do Sul farm was established with the ambition of staying ahead of market trends. They sought to achieve this through strict QC controls and pioneering a unique experimentation project. The project, driven by Luiz Paulo and his partners, aimed to take prized coffee varietals from different regions around the world and cultivate them using cutting-edge research and experimental processing to create a new profile of Brazilian coffee. It's been years of work, with failures and successes, but just one sip from this Gesha lot and it's all worthwhile. Heaps of floras, ripe soft nashi pear, and creamy papaya.
Varietials, Varietals!: The farm, once known for its traditional Brazilian coffee varietals, such as Yellow Bourbon, through the experimental project, has expanded to produce over thirty exotic varietals. These varied varietals are cultivated using innovative practices, implementing and mirroring unique varietal terroir characteristics such as pockets of shaded areas, and plot positioning to enhance growth.
Good neighbours help: Santuario do Sul's coffees are processed at the neighbouring farm Irmas Pereira. Irmas Pereira is one of the most traditional farms in Carmo de Minas. Once processed under the watchful eye of Luiz Paulo, he personally tastes the first samples of each batch to assess consistency ensuring nothing is lost across processing and that his coffee is a true representation of its extremely high quality.
Future Aspirations: Luiz Paulo and his team are committed to maintaining their pioneering status in specialty coffee. The first two harvests with new varietals and processes, have already earned them recognition for quality and innovation. Always on the forefront, their goal is to continue improving and offer exceptional coffee that meets and exceeds the evolving demands of customers and judges.
