This Yunnan special prep microlot comes to us from the lush, high-altitude regions of Mangshi, Yunnan, China. Grown at an elevation between 1,300 and 1,500 meters, this coffee is part of a special project called Project One Light (POL)--a 'Superheroes Assemble' like name, with an admirable goal.
POL--Pioneering Coffee Processing in China: Project One Light is a specialty coffee processing business located in the heart of Yunnan. It was founded in 2021 by Olina Cai, a local expert with over five years of experience in the specialty coffee and tea industry. Olina has hired an experienced and dynamic team of skilled Q-graders and coffee processing experts passionate about creating high-quality coffee. They are driven by the desire to put Chinese coffee on the world map and showcase how Yunnan coffee can meet and even exceed expectations in the global specialty coffee market. Mission achieved!
The taste has nowhere to hide: The team at POL believes that good processing doesn’t cover up flaws--it enhances the natural qualities of the beans. Known for producing cherries with exceptional flavours and characteristics, POL workers selectively pick fully ripe cherries from their high-altitude farms.
Special prep: One of the key aspects of this out-of-this-world lot is its special anaerobic fermentation process. Coffee processing experts precisely control yeast fermentation, temperature and humidity inside specially built fermentation vessels creating the perfect environment for wild and complex flavours to develop. This coveted method allows the flavours to become intense, and evolve into the unique taste profile that sets this coffee apart from pretty much everything else (no exaggeration here, we promise!).
