Matapa, our integrated supplier in the Kaffa region of Ethiopia, in the Shishinda district of Michity, operates within a unique climatic backdrop. 

What's unique? The seasons in the Kaffa region are well delineated, with the rain season spanning from March to October. This is a crucial period for coffee development and nurturing coffee cherry growth. The clearly defined seasons and stable, predictable environmental conditions explain the outstanding uniformity and consistency across this lot. 

Temperate and stable: Temperatures maintain an average range of 18 to 23 degrees Celsius all year round. Once again, a naturally occurring slim window of variability across crucial seasonal milestones organically creates a coffee cherry goldilocks zone. In conditions like these, cherries are slow to mature, allowing them more time to develop intense and complex sweetness and clarity. 

Harvest: Blessed with approximately 2000 mm of annual rainfall, the site boasts fertile reddish-brown soil, nurturing coffee plants to yield an exceptionally abundant harvest.

Post-Harvest: Matapa's post-harvest phase is meticulously managed, with drying periods extending from 20 to 30 days. Consistent quality control measures, combined with naturally occurring climate consistency, contribute significantly to the high-quality standards across Matapa's lots. This translates to coffee that is consistent from green, to roast, to extraction, to flavour!
