In the cup: Coffees have a distinctive personality--some are silly and colourful, others serious and contemplative. This sharply dressed character is sitting in a hotel lobby--serenading guests with jazz standards on the baby grand piano. An excellent body with fresh citric acidity, this espresso is well-balanced, incredibly sweet, and dessert-like. With almond butter, hibiscus and a long chocolate cake linger.The producer: The Hidalgo family began growing coffee in the El Pariso village in the municipality of La Libertad 1950s. In the 1970's, Don Silvano Hidalgo inherited a part of the farm, which he named Las Camelias for the beautiful camellia flowers that grew in his garden. The camellia flower symbolises beauty and love in the region and is a constant reminder of the farm's relationship with the land.
