In the cup: This region is often seen in blends filling base and body blend roles. That's one of the reasons we're so excited to showcase this espresso coffee from La Bastilla Estate. This coffee belies these often preconceived ideas about coffees from this region, with gorgeous florals and a sweet, almost milky-like texture. Predominant floral aromatics reveal delicate notes of jasmine and green tea. These notes move to creamy caramels (the ultimate Jersey caramel), malt, and white chocolate.

The producer: The story behind this extraordinary coffee team is not unlike a Rocky-style movie montage--from down and out to battling it out with the Champ! La Bastilla came into existence, taking on considerable risk by revitalising two abandoned estates in the Jinotega and Matagalpa regions. Slowly but surely, piece by piece (come on, Rock!), this once small dream of bringing something back to life began to grow and transform (literally!). Over the next 16 years, the property would thrive--upgrading roads, constructing living quarters, and establishing a mill and processing plant.

What sets this producer apart in Nicaragua? La Bastilla is one of the few specialty coffee estate companies within Nicaragua with a fully integrated supply chain segment at origin. This gives the team at La Bastilla Estate full control of some of the most difficult-to-navigate segments of our coffee supply chain. Not only does the farm at Las Brisas plant, cultivate, harvest, produce and process their coffees, but they also classify, market, and export all of their green coffee beans globally. This holistic approach also encompasses a Rainforest Alliance Certified environmental policy and education projects providing local children and adolescents opportunities.

The H1 Hybrid: The H1 Hybrid is a high-yielding tree that is compact yet produces large-ish beans. Interestingly, this varietal is a crossbreed derived from the leaf rust-resistant Sarchimor and the ever-popular Ethiopian landrace (not genetically bred but evolving different traits naturally) Rume Sudan.

A coat of many colours: Not a Dolly Parton fan? That's okay; perhaps a coffee of many flavours sounds a little more appealing. La Bastilla Estate plants a diverse range of varietals and fully integrated wet and dry processing on-site! Currently, the farm processes coffee in four different ways depending on which section of the farm the coffee comes from. Varietal and desired flavour attributes determine the chosen processing method, with current processing methods including fully washed, honey process, yeast fermentation, and natural. In total, La Bastilla Estate produces some 350 micro-lots annually--we are pumped to share this super special one with you.
