El Vergel sits in Fresno, Tolima, where brothers Elías and Shady Bayter have spent more than a decade refining how they grow and process coffee. What started as a family farm has since grown into Forest Coffee, a network of over 250 coffee growing families built around quality, innovation and transparent trade.
This lot is decaffeinated in Colombia using the sugarcane method. The green coffee is gently steamed, then the caffeine is drawn out with ethyl acetate derived naturally from sugarcane, before a second steam clears any remaining residue. Roughly 99% of the caffeine comes out while the sweetness, structure and origin character stay put, so it drinks like coffee first and decaf second.
