Santuário Sul was established by Luiz Paulo Dias Pereira in 2015 with a clear ambition to shift global expectations of Brazilian coffee through bold processing experiments and a broader focus on diverse cultivars. Alongside classic varieties such as Bourbon, the farm now grows more than thirty exotic and rare coffees.
Brazil’s climate naturally suits the more water-efficient natural, or dry, process, where cherries are left to sun-dry intact. As a result, washed processing remains relatively uncommon. Large-scale mechanised harvesting and lower altitudes also reinforce the dominance of natural methods. Even so, a small group of progressive producers are proving that washed lots can shine when handled with care.
