Jose Diaz and Ismael Aguilar are two young small-scale growers in La Palma who have been working with Seven Seeds' export partner Caravela for several years, farming and processing with real intent.

Their semi-washed Pacamara keeps some of the cherry's mucilage on the bean through drying, giving a fruity, textured and sweet cup. El Salvador was a menu staple in Seven Seeds' early years, and this lot is part of their sourcing team re-establishing that connection.
