ABOUT
As we celebrate ten years of direct trade with Familia Morales, we continue to grow our sourcing relationship with Finca Los Aguacatones. The Morales family started this farm in 2009 to concentrate on producing more unique varietals while utilising increasingly innovative and sustainable production methods. At around 2000 MASL, with an adverse micro-climate and poor soil quality, Los Aguacatones has always required a different approach to their other farms. Increasingly, the Morales family have begun experimenting with different processing techniques to minimise the environmental impact of coffee production. By sourcing from projects like this, companies such as Seven Seeds can help to provide growth opportunities for producers who will continue to face the harsh realities of a changing climate. This year's iteration of Los Aguacatones has undergone a 48-hour anaerobic fermentation. After which, the cherries are naturally sun-dried for a further tenish days. The thoughtful, focused processing has led to a highly approachable, fun-loving coffee.

In the coffee industry, certain words and phrases are used so often that they become almost meaningless. Terms such as fair trade and specialty are now nearly the ​​antithesis of what they once were. The goal of Seven Seeds is to continually push past these terms to move closer and closer to actual transformative and sustainable prices for producers at each origin. Working closely with the Morales family this year, we have implemented a future-focused buying strategy, prioritising our relationship over profit maximisation. Earlier this year, Seven Seeds co-owner Mark had the absolute privilege of visiting Fredy and his family, visiting their farms and dropping in on the kindergarten project they run for the coffee community. This is what a direct relationship should look like.
