Grown by a group of small-scale producers around Gigante in Huila, on the western flank of Colombia’s Eastern Cordillera, where steep slopes and cool mountain winds slow cherry ripening and aid drying. The coffee is decaffeinated at the Descafecol plant in Manizales using ethyl acetate derived entirely from sugarcane combined with mountain water, stripping 99.7% of the caffeine while keeping the cup’s original character intact — a smooth, sweet medium espresso roast with a little added fruit complexity from the EA process.
