Finca Cedro Quemado is located in the mountainous province of San Ignacio, Cajamarca. Roger Quispe grows Caturra, Typica, and a small amount of Catimor on the 14 acres of land he purchased 20 or so years ago. Harvest is always a busy time of year which takes place between the months of April and November, a fairly lengthy stretch compared with most harvest periods of around 3 months. This is due to the slow ripening of cherries which makes for great complexity and depth of flavour, but slow going if you happen to be a picker! This lot has been processed using the washed method and we’re finding loads of sugary sweetness, and crisp citric acidity. The ultra-refined, squeeqy clean finish is a testament to Don Quispes’ hard work, and desire to improve.
