Carlos has spent eight years in the coffee industry, six of them focused on specialty production. After inheriting his family's farm, he was inspired by pacamara plants he discovered on the land and gradually turned the steep terrain into a thriving coffee operation that he manages through every stage of the process himself. The cherries undergo an extended fermentation before washing and sun-drying, producing a cup that's bright with citrus and rounded out by herbaceous and nutty notes.

We dispatch orders on Tuesdays and Thursdays from our Melbourne warehouse.
